Pancakes

Ingredients :

  • 1 egg
  • 1 cup milk
  • 1 tablespoon cooking oil
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Cooking oil
  • Maple-flavored syrup or fresh fruit

Equipment

  1. measuring cups and spoons 1-quart jar with lid
  2. rubber scraper
  3. paper towel
  4. griddle
  5. pancake turner

  • Break egg into jar. Stir with rubber scraper. Add milk and 1 tablespoon of oil. Screw lid on tightly. Shake to mix well.
  • Carefully measure flour, sugar, baking powder, and salt into the jar. Close lid tightly. Shake to mix well. Batter should have some lumps.
  • Use paper towel to rub a little cooking oil over the griddle. Put griddle on burner. With adult help, turn burner to medium heat.
  • Heat the griddle. Sprinkle a few drops of water on the griddle. If they jump, the griddle is hot enough to use. Measure 1/4 cup batter for each pancake and pour onto hot griddle. Cook 3 or 4 at a time.
  • When bubbles cover surface of pancake and edges look dry, turn over with pancake turner. Cook till golden brown.
  • Remove pancakes with pancake turner. Repeat till you use all the batter. Put a little more oil on griddle if pancakes stick. Turn off burner. Sever with syrup or fruit.

Makes 7 or 8 pancakes.

Smoked Trout Omelette With Basil

Ingredients :
  • 1/2 lb/250g. Smoked rainbow trout
  • 4 Eggs
  • 1 tsp Water
  • 1/4 tsp Salt
  • 1/4 tsp Ground Pepper
  • 1 tbsp Unslted butter
  • 1 tbsp Chopped Fresh Basil

Equlpment :
  1. small bowl
  2. skillet
  3. platter
  4. spatula


  • Cut tail and head from trout and discard Peel skin and discard. Remove bones. Coarsely chop trout and set aside.
  • In small bowl, whisk eggs with water, and salt and pepper to taste.
  • In 8-inch (20 cm.) skilet, melt half of the butter and cook trout over low heat for a few minutes just to warm through. Remove to heated platter.
  • In same skillet, heat remaining butter until bubbly. Add eggs and cook for 2 minutes, lifting sides with spatula to allow uncooked egg to run undermeath. Sprinkle warmed chopped trout on top and dot with basil. Flip omelette so that top half covers filling.
Turn out onto heated platter and serve at once. Makes 2 servings.

Strawberry Shakes

Ingredients :
  • 1 10 - ounce package frozen strawberries, thawed
  • 1 cup milk
  • 1 pint strawberry ice cream or frozen yogurt ( 2 cups )

Equipment :
  1. measuring cup
  2. blender container
  3. spoon
  4. 3 tall glasses
  5. long - handled spoons
  6. straws

  • Put strawberries and their juice into blender container. With adult help, cover and blend till smooth. Add the milk. Cover and blend till smooth.
  • Scoop some of the ice cream or yogurt into each of 3 tall glasses. Put the rest of the ice cream or yogurt into the blender container. With adult help, cover and blend till smooth.
  • Pour mixture from blender over the ice cream or yogurt in glasses. Serve with long - handled spoons and straws. Top each with a whole strawberry, if you like.

Make 3 servings.

Oriental Steaks

Ingredients
  • 1 green pepper
  • 1 tomato
  • 1 cup cold water
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons cooking oil
  • 4 small beef cubed steaksChow mein noodles or cooked rice

Equlpment
  1. measuring cup and spoons
  2. cutting board
  3. sharp knife
  4. jar with lid
  5. 10-inch skillet
  6. slotted spoon
  7. plate
  8. tongs
  9. wooden spoon
  • Wash green pepper and tomato. With adult help, use a sharp knife to remove stem and seeds from pepper and cut it into thin strips. Cut tomato into pieces
  • Put water, soy sauce, cornstarch, sugar, and salt into a jar. Srew on lid tightly and shake till smooth.
  • Put oil into skillet. Put skillet on burner. With adult help, turn burner to mediumhigh heat. add green pepper. Cook till lightly browned. Remove pepper from pan with slotted spoon and put on plate.
  • Put steaks in pan and cook 1 minute or till brown on one side. Turn with tongs. Cook 1 minute or till brown. Put on plate.
  • Shake mixture in jar again. Pour into the skillet. Cook and stir with wooden spoon till thick and bubbly, as shown.
  • Put meat and green pepper into pan. Ad tomato and heat though. Turn off burne. Serve over chow noodles or rice.
Makes 4 servings.

Cornflske Chicken

Cornflske Chicken

Ingredients :
  • 2 cups cornflakes
  • 1/4 cup butter or margarine
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 chikcken drumsticks

Equipment :
  1. measuring cup and spoons
  2. plasticbag
  3. rolling pin
  4. pie plate
  5. 6 - inch skillet
  6. spoon
  7. paper towels
  8. waxed paper
  9. pastry brush 13 x 9 x 2 inch baking pan
  10. fork
  11. hot pads
  12. tongs

  • Put cornflakes into a plastic bag. Close the bag tightly. Use a rolling pin to crush the cornflskes. Pour the cornflake crumbs into a pie plate.
  • Put butter or margarine into the skillet. Put skiller on burner. With adult help, turn the burner to low heat. When butter or - maigarine melts, turnoff the burner. Move skillet off burner. Stir in salt and pepper till wellmixed.
  • Rinse the drumsticks under cold water. Use paper towels to dry them. Put chicken pieces on a piece of waxed paper.
  • Brush chicken with melted butter on all sides, as shown. Roll each piece in cornflake crumbs till coated.
  • Put drumsticks into a baking pan. Be sure pieces don't touch each other. If there is any butter left over, pour it over the chicken. Put baking pan into oveb.
  • With adult help, turn to 375. Bake till chicken is done. This will take about 50 minutes. Chicken is done when it is easy to poke with a fork. Turn off the oven.
  • With adult help, use hot pads to remove chicken from the oven. Use tongs to put drumsticks on the serving plate.
Make 4 servings.

Something Different
Potato Chip Chicken : Follow the recipe above, but use potato chips or barbecue flavored potato chips instead of the cornflakes. Crush enough chips to make 1 cup of crumbs.
